Apple, Carrot, and Avocado Salad with Curry Greek Yogurt Dressing and dried Cranberries

CurrySaladAnother delicious and simple salad!

The title really says it all. It’s a great combo of crunchy and smooth, sweet and savory.

Ingredients:

  • 1 apple, chopped
  • 2-3 carrots, peeled and chopped
  • 1 avocado, chopped
  • 1 container plain greek yogurt
  • Curry (1 tablespoon or so – to taste)
  • Handful of dried cranberries

Mix and enjoy.

For a more complete meal, I’m sure this would be great with some chicken or tofu thrown in.

  1. I like using Greek yogurt for creaminess in place of mayo or other not-so-healthy ingredients. I haven’t tried it with curry yet, but that sounds like a great idea!
