Inspired by this Cabbage and Feta Salad, I’ve created my own go-to, easy, delicious salad!
This has become something of a staple for me – I’ll make it for weeks and weeks in a row, sometimes. It’s easy to make, especially if you buy items pre-cut. It’s delicious. It’s (relatively) healthy, and filling if you eat enough of it. I love taking a large container of it into work. It keeps well for about 4-5 days, depending on the cheese.
Salad Ingredients:
- Shredded cabbage
- I usually buy pre-made packages, which often included shredded carrot
- Red bell peppers (or mix of bell peppers), cut into small pieces
- Green onions (1 bunch)
- Feta cheese (1 container)
- Almonds (I prefer roasted unsalted)
“Dressing” Ingredients:
I’ve used different things, but usually I use a base of plain, non-fat or low fat Greek yogurt, plus a pre-made sauce mixed in. Usually either Quaker Steak and Lube’s Arizona Ranch, or Target’s Peanut Stir Fry Sauce. Neither is intended for a dressing, but both work well in this case.
Combine all salad ingredients except almonds. Add almonds and “dressing” just before eating. Enjoy!
