Cabbage, Feta, Bell Pepper, and Green Onion Salad

Inspired by this Cabbage and Feta Salad, I’ve created my own go-to, easy, delicious salad! Cabbage, Feta, Bell Pepper, and Green Onion Salad

This has become something of a staple for me – I’ll make it for weeks and weeks in a row, sometimes. It’s easy to make, especially if you buy items pre-cut. It’s delicious. It’s (relatively) healthy, and filling if you eat enough of it. I love taking a large container of it into work. It keeps well for about 4-5 days, depending on the cheese.

Salad Ingredients:

  • Shredded cabbage
    • I usually buy pre-made packages, which often included shredded carrot
  • Red bell peppers (or mix of bell peppers), cut into small pieces
  • Green onions (1 bunch)
  • Feta cheese (1 container)
  • Almonds (I prefer roasted unsalted)

“Dressing” Ingredients:
I’ve used different things, but usually I use a base of plain, non-fat or low fat Greek yogurt, plus a pre-made sauce mixed in. Usually either Quaker Steak and Lube’s Arizona Ranch, or Target’s Peanut Stir Fry Sauce. Neither is intended for a dressing, but both work well in this case.

Combine all salad ingredients except almonds. Add almonds and “dressing” just before eating. Enjoy!

I’ve been so excited to eat this, every time, that I forget to take pictures of the fully dressed thing until it’s half-eaten. So, consider this picture a testament to how much I love this salad!
