
I started with these “Potato Cheddar Bites,” but kept simplifying. One time I had no eggs, another time I forgot the breadcrumbs, and often I didn’t have onion around. It came down to just TWO ingredients: shredded potato, and shredded cheese. That’s it. And they’re amazing!
Ingredients:
- Shredded potato
- I get frozen shredded potatoes from Trader Joes! It’s the only place I’ve found ’em.
- Shredded cheddar cheese
- I buy pre-shredded cheese, usually. The finer the shred, the better, but anything will work.
- I’ve used other cheeses, like mozzarella before, and those worked fine. I prefer cheddar for this, personally.

Pre-heat oven to 400 degrees Fahrenheit (or so).
Mix the potatoes and the cheddar in a bowl, and then put them in whatever you’re baking them in.
If it’s not non-stick, spray with olive oil or butter to avoid too much mess later on. I usually use my non-stick mini muffin tin, but sometimes use a few pyrex containers as well.
Check after ~10 minutes. You’ll know they’re done when the tops are brown.
My kid, husband, and I can eat a whole tray pretty quickly! My extended family enjoys them as well. They’re great for a party appetizer, though you may want to make two trays worth, since they go fast.
They’re still pretty yummy after being kept in the fridge and reheated, though they get a bit soggy in the microwave, naturally.
