This has become my go-to salad for weeks now. As per usual with me, it’s quite simple.

Ingredients:
- 3 apples
- I like honeycrisp, but whatever you like is fine
- 1 bunch celery
- 3 carrots
- Cooked chicken
- Leeks or green onion (optional)
- Mayo
- To make this soy-free and low histamine, I use Primal Kitchen Mayo
- Curry, to taste
Recipe:
- Cut up the carrots, celery, apples, and leeks/green onions (if using) into small quarter to half inch size bites
- Cut or rip up the cooked chicken
- Mix in the mayo
- It’s important to do this fairly quickly after putting in the apple, or else it will brown. I often do the carrots and celery first and leave those in for a while, and then do the apples and mayo later just depending on what else I’m cooking, but the apple and mayo need to go together
- Mix in the curry, to taste
